Caroline: I have something to make you feel SO MUCH BETTER. And probably your mommy too because it will keep her real busy doing stuff. Here is a recipe for HOME-MADE CHEEZ-ITS!!
2 cups (8 ounces) grated sharp cheddar cheese 1/2 cup (1 stick, 4 ounces) unsalted butter, soft 1 1/2 cups (6 3/8 ounces) Unbleached All-Purpose Flour 3/4 teaspoon salt ice water 1/4 teaspoon chili powder 1/8 teaspoon paprika 1/8 teaspoon cayenne Blend butter and cheese in mixer. Add flour, salt and spices. Add a tablespoon of ice water if the dough is having trouble coming together. Divide dough into two rectangular patties, wrap in plastic and refrigerate for 20 or 30 min. Preheat oven to 350. Take dough and roll each half 1/8" thick on parchment or silpat. Prick with fork all over. Cut squares with pizza or ravioli wheel. No need to separate individual crackers- they will pull away from one another during baking. Transfer parchment or silpat to baking sheets and bake ten min- when each cracker is brown around the edges.
We are so very sorry. Altho we can't know 'zactly how you feel, we fur sure understand since we have lost as well. We are sendin' lots and lots of hugs and purrayers.
